Inspired by the cuisines of France, the Mediterranean, and Asia, you will create a menu that combines classic recipes with a modern twist, bold flavours, and elegant presentation. Spend an evening dedicated to exceptional food, new culinary skills, and the pleasure of creating dishes using the very best the sea has to offer.

During the course you will prepare:

  • Scallops with Thai Curry Sauce – perfectly seared, caramelised on the outside and tender on the inside, served with a silky, aromatic curry sauce balanced with exotic spices – a delight for all the senses.
  • Oysters Rockefeller – luxury at its finest – succulent oysters baked with herbs, butter, and delicate notes of anise and fresh greens.
  • Octopus with Santorini Fava – tender octopus with a lightly smoky flavour, served on silky Greek fava bean purée – a perfect balance between land and sea.
  • Tuna Steak with Asian-Style Salad – lightly seared on the outside and juicy in the centre, accompanied by a refreshing salad with citrus, crunchy textures, and a vibrant Asian-inspired dressing.
  • Calamari with Provençal Pastis Sauce – tender calamari served in a creamy sauce infused with the delicate anise flavour of pastis – an elegant dish with the character of Southern France.

During the course you will learn:

  • How to cook seafood without overcooking it.
  • Techniques for achieving the perfect sear and texture.
  • How to balance flavours and textures.
  • Restaurant-style plating techniques.
