During this course, you will learn how to work with Morocco's signature spices and marinades, prepare authentic chermoula, discover the ritual of making and serving the iconic Moroccan mint tea, and explore the harmony of sweet, sour, and aromatic flavors that make North African cuisine so distinctive.

During the course, you will prepare:

  • Lsan Teer Shorba (Bird's Tongue Soup) – A fragrant Moroccan soup made with delicate bird's tongue pasta in a rich tomato broth infused with traditional herbs and spices. Velvety, comforting, and deeply satisfying, it is a classic way to begin Moroccan meal, combining Mediterranean freshness with the rich flavors of the Orient.
  • Sea Bream with Moroccan Chermoula – Tender and succulent sea bream marinated in the famous Moroccan chermoula, a vibrant blend of fresh herbs, garlic, lemon, and aromatic spices. Fresh coriander and parsley enhance the natural flavor of the fish, creating one of Morocco's most beloved coastal dishes.
  • Moroccan Meat Briouats – Crispy golden pastry rolls filled with richly seasoned minced meat and aromatic spices. The contrast between the delicate, flaky pastry and the juicy filling makes this one of Morocco's most popular appetizers and savory snacks.
  • Cauliflower with Preserved Lemon – Tender roasted cauliflower seasoned with homemade preserved lemon and premium olive oil. Bright citrus notes complement the vegetable's natural sweetness, creating a light and elegant side dish.
  • Jawhara – The Jewel of Moroccan Desserts – One of the most spectacular desserts in Moroccan cuisine. Delicate crispy pastry layers alternate with silky cream infused with orange blossom water. Elegant, light, and wonderfully aromatic, this dessert combines an airy texture with subtle floral notes for an unforgettable finale.
