Fish and seafood are undoubtedly among the healthiest foods, but most home cooks feel uncertain about the finer details of cleaning and preparing them.
In this course, you will learn different methods for cleaning, deboning, and filleting fish. You will discuss which types of fish are best prepared in which way to make them juicy and flavorful, as well as the specific characteristics of seafood.

During the two-day course you will prepare:

• Sicilian octopus salad
• The famous French soup bouillabaisse
• Salmon and shrimp terrine
• Steamed braided fish with lemon sauce
• Stuffed gilt-head bream with fennel and oranges
• Sea bass plaki with walnuts
• Stuffed mussels with rice and vegetables
• Trout with cream and almonds
• Homemade warm-smoked mackerel with green tea
