You will explore the centuries-old journey of the olive tree through vibrant flavors and aromas. Chef Ivelina Ivanova has crafted an exceptional fusion menu, designed exclusively for this course. Discover how the Mediterranean blends with culinary traditions from the Near and Far East, Iran, and Peru in a euphoric and modern interpretation.

During the course, you will learn:

  • why to cook daily with extra virgin olive oil, using various techniques (sautéing, roasting, simmering)
  • which oils are best for cooking and which for finishing dishes
  • how to become a true kitchen virtuoso with extra virgin olive oil by selecting the right variety and style for every dish
  • why extra virgin olive oil is unrivaled among fats – in flavor, composition, and health benefits
  • how to taste and recognize high-quality olive oil and how to choose the right one for your home

You will taste:

  • three premium extra virgin olive oils from Portugal, Spain, and Italy – single-varietal and blends
  • one compromised-quality extra virgin olive oil (for comparison and learning)

You will prepare:

  • leafy citrus salad with hazelnuts, burrata, and rose water olive oil vinaigrette (delicate intensity, early harvest, Catalonia/Spain) – fusion of the Mediterranean and Iran
  • marinated strawberries with Shanxi vinegar, yuzu, and olive oil over a ricotta, miso and honey cream (delicate intensity, early harvest, Alentejo/Portugal) – fusion of China, Japan and the Mediterranean
  • shrimp ceviche with lime, pomegranate, and olive oil (medium intensity, early harvest, Córdoba/Spain) – fusion of Peru and the Mediterranean
  • Tunisian “Harissa Ramen” with sun-dried tomato and olive paste (medium intensity, traditional harvest, Sicily/Italy) – fusion of North Africa, Japan and Italy
