Azerbaijani Cuisine – The Flavors of the Caucasus and the Silk Road with Chef Ivelina

Treat yourself (or someone special) to a culinary journey to Azerbaijan – where the flavors of the Caucasus, Persia, and the Silk Road come together in one of the world’s richest and most aromatic cuisines.

During this course, you will discover the signature techniques, ingredients, and flavor combinations of Azerbaijani cuisine and prepare five authentic dishes.

You will work with thin dough, fresh herbs, vine leaves, saffron, walnuts, chestnuts, dried fruits, and aromatic spices. You will learn techniques for shaping miniature stuffed vine leaves, preparing saffron-infused plov, and working with lavash to create its characteristic crispy crown.

During the course, you will prepare:

• thin Azerbaijani flatbreads filled with fresh herbs, finely rolled out and baked until golden brown spots appear.
• a fresh salad of tomatoes, sour cherries, red onion, and mint, where the sweet-and-sour fruit profile balances the other dishes.
• miniature stuffed vine leaves with lamb and beef, rice, and fresh herbs. You will learn the technique for shaping small, compact, and evenly cooked dolma.
• a festive saffron plov with chestnuts and dried fruits, enclosed in a crispy lavash crust. You will prepare both a vegetarian version and a chicken version.
• a multilayered walnut baklava with cardamom and saffron, cut into characteristic diamond shapes and bringing the menu to a close with a rich nutty and aromatic profile.
