The ABC of Cooking: Spices

What is food without spices? Just cooked. But with spices? Pure magic!
In this course, you’ll embark on a colorful and aromatic journey through the world of spices — how to recognize them, how to combine them, and how to use them boldly yet wisely. You’ll explore classic and intriguing spice blends from around the globe, and then cook with them.

The program includes:

• How to pair spices with different foods — what works well together and what doesn’t

• What’s inside famous spice blends — garam masala, ras el hanout, Italian, Greek, Provençal, and Mexican mixes

• Which spices suit different types of meat, fish, vegetables, and desserts

• How to combine spices with each other

• Ideas for aromatic oils and vinegars

During the course, you will prepare:

• American-style ribs with Cajun seasoning

• Thai-style fish and seafood with coconut milk, galangal, and lemongrass

• Caribbean-style roasted sweet potatoes with Jerk seasoning

• Fragrant, fluffy French bread with garlic butter and Provençal herb mix

• Moroccan orange cake with pistachios and ras el hanout, topped with black lime honey
