During this class we will follow the steps of Georges Auguste Escoffier – a French masterchef, who set the foundation for the culinary traditions of the 20th century and the traditional French cuisine. Auguste Escoffier believed that sauces are the key to making dishes unique and that the focus must be on the taste, nutritional qualities and lightness.
Together with Nikolay Nemigenchev you will dive deep into the philosophy and the actual making of traditional French dishes.
The menu includes:
- Shrimp bisque with fond blanc
- Beef fillet with pea cream, glazed carrots, fondant potatoes and a Béarnaise sauce
- Brioche bread
- Austrian biscuits with bourbon vanilla ice cream as well as widespread pears in white wine and almond praline
