The Flavours of Mexico City: Tacos and Salsa

Give yourself (or someone special) an evening where Mexico City comes alive with the aroma of grilled meat, corn tortillas, dried chillies, pineapple, and freshly made salsa.

Over the course of three hours, you’ll immerse yourself in the world of Mexican street food and prepare classic tacos, homemade corn tortillas, juicy chicken, and some of those spicy and tangy additions that Mexican street food simply wouldn’t be the same without.

During the course, you’ll prepare:

• Corn tortillas – soft, warm, and slightly puffed, made from corn flour and cooked on a dry skillet.
• Tacos al pastor – thinly sliced pork marinated in a fragrant dried-chilli adobo, served with onion, coriander, and grilled pineapple.
• Chicken in adobo (Pollo asado en adobo) – juicy chicken thigh marinated with guajillo chilli, lime, garlic, cumin, and oregano, then grilled until beautifully browned.
• Roasted green salsa (Salsa verde asada) – roasted tomatillos, green chilli, onion, and garlic, roughly ground to preserve their texture and smoky flavour.
• Pickled jalapeños (Jalapeños en escabeche) – spicy jalapeños with carrots and onion, marinated in an aromatic sweet-and-sour vinegar brine with spices.
