You probably think that the Rhodope cuisine cannot surprise you, but the people of Mogilitsa keep unique local recipes with tastes unknown to city people. Some of them are an ancient technology for "shrinking" couscous and a dish with the twisty name "sindermyo". We invite you to taste these dishes and  to prepare them together with cooks from the village.

Couscous originated from the Berbers and, like many other ancient foods, it was introduced to Bulgaria from the Middle East. Today, we know little about this product in contrast to the widely used Italian "couscous" - a pasta that is actually called peperini, acini di pepe or piombi in Italy. Gastronomists point out that there is a difference between the two products, not only in the origin, in the ingredients and in the preparation technique, but also in their taste.

It may sound incredible, but the ancient Middle Eastern technique of "shrinking" couscous has been preserved as a living tradition in Mogilitsa, and nowadays the hosts at the village continue to apply it.

Sindermyo on the other hand is a traditional regional dish with a strange name that looks like kachamak but isn't. It's also made from corn semolina, but with a generous amount of yellow cheese or mature cheese added to it. Legends say that in the past, it was prepared by the locals only on festive occasions for the family. Get to know the mastery of preparing these dishes!

Idea: combine your culinary workshop with a visit to the nearby cave "Uhlovitsa" and the Gorlo Canyon of Arda river
