"Gargale" (chick in Bulgarian dialect), in plural "gargaleta", is a special local dessert prepared only in Yakoruda. Recently, it is becoming more present at the festive tables for both Kurban Bayram and Gergyovden, which is why people in the town increasingly attach importance to it as a unifying traditional specialty for the community.

The name of this dessert comes from its resemblance to a large nest with small chicks (gargaleta).  To prepare it, one has to know both culinary subtleties and to have strength to stir the hot dough. One person should firmly hold the large pot on the fire, and another should stir firmly and quickly with the wooden "stirrer". The process takes time, but this is the most valuable opportunity to chat with the locals, relive an extraordinary day with them and enjoy a super delicious dessert.
